It is known for a strong aroma of artichokes and grass, and develops hints of almonds and citrus, before bringing in peppery and bitter flavors -- making it a truly remarkable oil. Along with the Gran Cru selection, these oils are among the best of Italian oils. The bottle includes a cork/pouring spout, and makes an excellent gift.
The olives are hand-picked in late October for this oil that is green with hints of gold. The fragrance is intensely fruity and elegant, with a strong aroma of green olive, pungent and grassy with hints of artichoke and cardoon, and even subtle elegant notes of roasted coffee. The flavors are best described as intensely fruity, fresh, grassy, pungent, and complex. It is harmoniously bitter and peppery, well-structured, with a fresh finish of spicy grass. It works well with full-flavored foods and also enhances simple preparations. Consider with soups, raw or prepared vegetables, boiled potatoes, pasta, and well-matured cheeses.
