To face the challenge of a disappearing industry in the Campania region, Francesco Vistola, the owner of Maida Farm, digged into his family's patrimony of traditional recipes and took advantage of a still unspoiled region of Italy to produce his outstanding preserves. The Maida farm is located in Campania, near the Cilento National Park and just around the majestic ruins of Paestum. The favorable soil and climate of this region of Italy allow Francesco to grow fruit and vegetables of the highest quality and flavor. A mix of innovation and tradition characterizes Francesco's production: freshly-picked vegetables becomes "sott'olii" when packed in the excellent extra virgin olive oil from Cilento and canned in his modern facility built right next to the farm. For his signature "antipasto" (much requested by Italian chefs as well), Francesco selects a melange of fresh vegetables. We are particularly impressed by the choice of lightly pickled pumpkin, unusual in most Italian antipasti mixed with small chunks of eggplants, peppers, artichokes, celery, olives and zucchine, immersed in Cilento extra virgin olive oil, and flavored with some white wine vinegar, origano, chili pepper and sea salt. Ideal antipasto with a plate of "salumi" and cheeses.
